Weekend 5K & Being an Imperfect Intuitive Eater

Hi, Friends!

Coming at ‘cha from the hospital break room at work today. If my photos are unusually ugly and my grammar is especially nightmarish, we are gonna still be friends, okay? Good. Real life:


Hope your weekend was restful and left you feeling rejuvenated! I went to (surprise, surprise) Dallas…again.


Our cousin, Chance, came into town, and we ran a 5K- his first ever race! He’s mostly a weight-lifter, but has recently been adding running to his workouts and is pumped about the mental clarity and energy it has given him (his words, not mine!). No matter the reason, I’m so stoked to have a new running partner!!

This was a FUN race at Fair Park, home of the State Fair of Texas and the Red River Rivalry between The University of Texas (hook ‘Em!) and OU.


I actually lost Chance before we even made it to the starting line (FAIL)…so we didn’t run the race together at all. I did find him on the course though, and I was able to wave from afar!


Just a cool course! Highly recommend both the Rock ‘n Roll Dallas 5K AND Half-Marathon. I’ve done them both, and they’re some of my very favorite courses.

We grabbed some post-run salsa-filled, Tex-Mex breakfast skillets at our new favorite- Victor Hugo’s on the patio and then headed out for more adventure at White Rock Lake.


Sophie is basically a famous little Dallas dog with the sweetest personality. We made frequent stops around the lake for Sophie to greet random admirers.


We had dinner at Saint Rocco’s Italian outside on the patio, and we loved the atmosphere, complete with delicious merlot and spicy shrimp scampi…but the small portion sizes left us feeling bummed. I do recommend for a fun date spot with a view of the city, though!

We ended the night watching Amazon’s “Sneaky Pete” and sharing cheesecakes from Eatzi’s. All around, a perfect weekend!


I’ve been learning more about Intuitive Eating (read the book awhile ago, and I wasn’t at a place in life to be receptive). Basically, I’ve been focusing on eating without stressing about food…because it’s just food at the end of the day, and food is nourishing. Letting go of the diet mentality has been challenging (e.g. not beating myself up over delicious cheesecake, but rather ENJOYING the mess out of it, savoring each bite, because I don’t eat dessert or dairy often, and it just tastes good regardless of any justification).

Part of intuitive eating and letting go of the diet mentality is realizing that diets DO NOT work for long-term weight loss (disclaimer: I have not YET had a class on weight loss in my nutrition education, nor have I personally ever dieted for weight loss, so I do not feel that I can confidently comment on dieting specifically for weight loss goals, but I will say: if dieting gives you structure, and you feel healthy mentally, and you’re feeling nourished and strong- GO FOR IT. But choose a diet that is sustainable and inclusive of fruits, veggies, and all the macronutrients that keep our bodies the capable, strong beings that they are!).

If I’m being honest- I struggle with the negative stigma surrounding diet mentality. Actually-I can’t subscribe to the “diets are bad” mentality, and here’s why: my personal experience(s) with doing the Whole30.

I did the Whole30 to eliminate foods that could cause inflammation, and since I have an inflammatory disease, I was looking only for non-scale victories: more energy, less frequent poop attacks (explicit version included-you’re welcome), and more painless, restful nights. Did I accomplish this in 30 days? Heck yes I did. However-I did NOT weigh myself before, during, or after the program (fun fact: I do not own a scale). After the re-introductory phase, I did not stay on Whole30 for life because that’s NOT how it is intended, and I refused to give binary labels to food such as “legumes are bad” because THEY ARE NOT, and if you walked away from the Whole30 with that mentality, you missed the point.

As an IBD patient who is chronically trying to navigate this chronic, autoimmune disease (ulcerative colitis)- I try to include as much variety in my diet as possible. Including- I drink alcohol on celebratory occasions. Hell, I even have cheesecake (even though there are rough consequences for dairy desserts for me), but I DO NOT feel bad/guilty/sad about any of it, because I really do feel like I have learned how to enjoy food for being food. However, I do not appreciate the damning of diets- simply because diets DO work for some people, and certain populations REALLY need diets (e.g. the Mediterranean diet has documented successes on heart health; ketogenic in treatment of epilepsy; renal diets for kidney failure patients; avoidance/inclusion of certain foods for IBD patients; gluten avoidance for Celiac patients, and the list goes on).

I’m just a girl trying to work her way though nutrition school, healing my gut intuitively, sometimes with a little help from the Whole30, or low FODMAPs, or another science-based elimination DIETS to figure out what THE HELL to feed my stubborn gut to make it heal. There are situations when intuition isn’t enough, and maybe that’s because Crohn’s/ulcerative colitis patients aren’t part of the general population.  We are just a little bit extra. 

Does all this make me an intuitive eater failure? Hey- I’m a work in progress.
I’m educated AF, and I’m here to learn, even if I’m not perfect; This bite of cheesecake sure is.

Dallas Weekends

Hi, Friends!

Hope you’ve had a great week! Happy FRIDAY! I’m writing from the cutest coffee shop that I’ve ever visited, Murray Street Coffee in Dallas.

This place feels very neighborhoody with a bohemian/Scandanavian flair, but I was greeted by a barista who affectionately called me “darlin'”. Still in Texas. If you’re in the mood for some warm coffee on a nice day and happen to find yourself near Deep Ellum in Dallas, come pay this place a visit.

^this was TASTY, but I could only handle so much salmon and onion before feeling like I was suffocating from my own horrid breath. g-l-a-m-o-r-ou-s

This morning I had a check-up at the gastroenterologist in Dallas to review my blood work from the last few weeks. Things are looking great! I’m mildly severely anemic from this last flare up and will require iron infusions, and I couldn’t be more grateful to still be progressing. I know that healing isn’t linear (my gawd has that lesson been hard to learn over the years), but I’m thankful to have been able to keep doing the things I want to do: sleep, yoga, running, cooking, maintaining what little of a social life I do have. The life stuff has helped me heal.

Last weekend we drove to Dallas (seems to be a theme lately) for my sister’s 25th and celebrated her the best way we know how: with the dogs!

We went to E Bar for fajitas, margs, and queso (all of Lindsay’s favorites), and I instantly remembered why I love this place: They give EACH person at the table their OWN bowl of salsa. I eat salsa so furiously and with such intensity that I almost need to ask for my own salsa anyway. E Bar gets me.

Saturday we woke up and brunched (another Lindsay fave). We went to a highly rated bungalow called Johnson’s in Oak Cliff, but the wait was out the wazoo, and Victor Hugo’s was literally right next door with an open patio on a perfectly sunny day.
We made the right choice.

The brunch prices were reasonable; the food was delicious. I ordered a Mexican scramble thing with lots of spice and veggies under sunny-side-up eggs and ughhh so gooooooood. HIGHLY recommend Victor Hugo’s for their patio brunch on a sunny day; not sure why Dallas keeps re-visiting the crowded next door patio and leaving this place completely empty…but it really worked out in our favor!

Afterward we headed to Community Brewery for a tour and quality time spent at picnic tables with friends and pups. The beer here was so great! We hated it so much that will be back tomorrow morning for yoga.

^ I tried this red lentil pasta from Trader Joe’s this week, and it was great! I recommend! Lentils are an excellent source of protein and magnesium, and I’ve been trying to get more magnesium in my diet to help with muscle function and recovery since I have been moving more. I paired this with sautéed garlic, onion, mushrooms, and chicken, simmered with some red peppah and organic marinara, although the protein content in these bad boys is sufficient enough to not necessitate any animal protein with it. Easiest meal evahhhh.

I gotta keep this post short and sweet so I don’t get spanked by an upcoming biochemistry exam. Prayers and good juju are greatly appreciated. Don’t ask me how many times I’ve had to memorize the effing citric acid cycle- it’s a rough topic these days.

Weekend Recap + Mint Chocolate Smoothie

Happy Monday, Friends!

Hope you had a great weekend!

I drove to my hometown near Houston, TX for an impromptu visit this weekend. My dad was in the hospital fighting an unknown bacterial infection in his pinky bone. A couple surgeries and a lot of antibiotics later, the pinky is saved! Hopefully he will be released sometime this week, but infectious disease is keeping a close eye to ensure the infection is contained without spreading throughout his body.

He was in good spirits, especially after his Astros beat the Yankees to win the pennant! He cried real, happy tears. If you’ve been an Astros fan for your entire life, I’m sure you understand- so many feels.

View from Dad’s window- Houston has been through too much this year thanks to Hurricane Harvey. So proud to come from this strong, diverse, vibrant community.

I love the Texas Medical Center- I’ve been a patient here, I’ve worked here, and I’ve volunteered here. There’s no place like it. Truly.

We stopped by Pronto’s on Holcomb Blvd for chopped salad with salmon, one of my all time favorites by the med center. I also got a piece of tiramisu, and I highly recommend.

Then we popped over to a hometown football game to watch my cousin’s homecoming halftime show performance (how cute is she though?!). LOVE small-town football!

The next morning my sister and I went through old boxes of keepsakes in the garage that my parents stored from our childhood. My mom wanted us to go through everything and decide what to keep…still not sure why…but it was entertaining. I learned that I am not particularly a sentimental hoarder about most things, but I did fall victim to Barbie nostalgia. Not pictured: Scuba Barbie, Shaving Ken, and Dentist Barbie.

Then we found this quaint little spot right behind my old high school for lunch. WHY did places like this not exist ten years ago?! 421 Coffeehouse was fantastic.

And then we drove back to Houston to hang out with Dad some more. Sunday morning we began the long drive back to Oklahoma City. Oh- CHECK OUT MY COPILOT:

Her name is Sophie. She’s 11 weeks old, loves to play fetch and cuddle, and I want to hold her every day. She’s my sister’s dog, and she did fantastic on her first long road trip!

This morning I caught up on some (much needed) sleep and managed to whip up a mint-chocolate chip smoothie. I actually used some vanilla pea protein from Trader Joe’s for this recipe that was VERY affordable (but not my very favorite taste). Honestly, you’ll appreciate this recipe much more if you use some sort of chocolate-flavored protein. Because of all the nutritious ingredients like frozen cauliflower and frozen avocado (fear not- these are tasteless additions, I promise!), I was quite full after this smoothie.

Mint Chocolate-Chip Smoothie

  • Servings: 1-2
  • Print

A creamy, nutritious chocolate chip smoothie full of healthy fats, veggies, and tasty goodness.

Ingredients

  • high speed blender
  • 1 C almond milk
  • 1 C frozen cauliflower
  • 1 small handful of fresh mint leaves, trust me…
  • 1 frozen banana
  • ½ C frozen avocado (you won’t taste this ingredient, and it adds rich, creamy texture with healthy fats, keeping you fuller longer!)
  • ½ C ice cubes
  • ¼ C deep dark chocolate chips OR raw cacao nibs
  • one-two hefty, violent shakes of the ground cinnamon bottle
  • 1 scoop of vanilla protein. (!!!This would taste better with chocolate protein though!!!)

Directions

  1. Pour milk, protein and remaining ingredients into blender
  2. Blend on “high” until thick and rich texture is visible
  3. Pour and serve. I like to top with melted deep dark chocolate or cacao nibs. Enjoy!

A Weekend in San Francisco

This past weekend Sydney, a close friend from back in the high school days, and I traveled to San Francisco to celebrate a wedding. We had zero plans after our plane landed, so we decided to take a drive across Golden Gate to Sausalito!

I actually thought Sausalito was a sleepy little harbor town in a quiet dreamland, but after breakfast the town started to come alive. We really loved walking around and exploring this place!

We found a coffee and breakfast nook called Cibo that I HIGHLY recommend if you’re ever in the Bay Area. I had a smoked salmon panini with black coffee that tasted nutty and strong, and the prices weren’t outrageous. I’d give them 5 stars!

Then we walked along the harbor, hitched a Lyft, and journeyed to Muir Woods, down and around switchbacks that our driver navigated at brisk, daring speeds growing faster as the curves got steeper, and Sydney and I both ended up carsick…

…But seeing this forest was well worth it!

These trees were sacred. I mean it. I felt so incredibly enchanted and peaceful walking through their cool shade, looking up high into the sky to see their leaves while tripping over their strong, gigantic root systems in my tiny shoes, laughing at myself. I thanked God for this magical experience.

Just as I was thinking, “I am so small and insignificant” I ran into my roommate from Houston, Christy (and the world suddenly felt even smaller)!!! I had NO IDEA that we were going to be in San Francisco the same weekend, and we had ZERO cell reception in Muir Woods, so we honestly couldn’t have planned our reunion any better than fate.

Remember when I said we had zero cell phone reception? That also means no Lyft or Uber…so after Muir Woods we called a (very expensive) taxi cab driver from the Muir Woods Visitor Center to take us back into Sausalito…where we ended up carsick (again).

But nothing a glass two glasses of California Pino Noir couldn’t fix.

Then we ferried back across The Bay for an affordable $12 and met Christy for dinner…

The next morning we slept in and enjoyed the sun beaming in through our AirBnB before taking a walk under the warm sun in the cool, windy air to breakfast.

We walked through a nice, beautiful neighborhood with large, manicured yards, which seems to be rare in SF. Sydney said these trees “looked like giant broccoli”- ha!

We went to Cafe Antigua in Japantown where I was pumped to drink this almond chai, and it was delightful. But I made the mistake of ordering a breakfast taco (sorry guys, the Texan in me strikes again), which I’m pretty sure made me violently symptomatic…or maybe it was the chai. Who knows!
The rest of the day was spent napping/recovering while Sydney bossed an economics exam.

And then the wedding! So beautiful. This was my first time at a Muslim Palestinian wedding, and if I’m being honest- I have never felt more alive at a wedding reception before in my life! From hours of dancing to live drums and tambourines to the food-I loved every soul I met- the families were so hospitable and accommodating “be sure to dance all night long!” and celebrating Waleed and Amany until late at night was a real treat.

I got a pic with the King! Groom Waleed and I met while we were both working at a hospital in Houston. He was counting down the days until he and his roommate got to move back home to San Francisco, but in the meantime he adopted me as his little sister, and I am so thankful. I couldn’t be happier for he and his Bride- she is a true beauty inside and out. So much happiness!

The next morning we said “Goodbye!” to our sweet, little bnb and headed back to the airport.

I missed Zack (and Jaxon) A TON, so it was great to return home.

Peanutbuttah Cinnamon Granola Time

I love being awake early in the mornings on the weekends. I feel like the day is mine; like I’ve discovered a world without lines at the coffee shop, trafficless streets, and running routes free from swarms of people. Mine.

This morning I woke up and it felt fall-ish, so I thought I’d bake some quick granola in the spirit of the changing seasons. For all you runners and fitness freaks, this is an excellent source of complex carbs, fats, and fiber, giving you energy and keeping you fuller longer.  Note that this stuff is pretty caloric, so proceed with caution before you eat it by the handful  faceful.

Peanutbutter-Cinammon Granola

What you’ll need:
-3 cups of old fashioned rolled oats (here’s the kind I buy in bulk, but use whatever makes you happy!)
-1 cup mixture of unsalted sunflower seeds, pumpkin seeds, and sliced almonds
-a splash of cinnamon (or a hefty shake. If I’m being honest, I never measure cinnamon, and I know this will drive some people nuts. Live a little, you rule-abiding, recipe-following friends- I promise you won’t regret it in this recipe.)
-3 tsp honey (optional- tastes great without it!)
-4 tbsp vanilla extract
-1 cup peanut buttah- stick it in the microwave for 10-20 seconds to soften
-1/2 cup coconut oil- also needs to be softened justttt a bit
-an oven, preferably one larger than my miniature oven, set to 350.

*The secret to this stuff is to mix the dry ingredients and wet ingredients separately before combining them*
-Spread mixture over a non-stick pan and stick in the oven for 5 minutes
-STIR and fluff with fork at the end of the 5 minutes- this will prevent the stuff from sticking to the pan and burning
-Stick it back in the oven for another 6 minutes

Serve over yogurt, in a smoothie bowl, or in your hands. Enjoy!
Store in an air-tight container. Today I chose door number two pictured above, and I added raw cacao nibs for additional fun and excitement.

Quick Guide to Austin Favorites + Weekend Recap

Have you ever been to Austin, TX?

Austin is one of my favorite cities, not just because it’s where I did my undergrad (hook ’em!). I love how it’s completely Texas but also energized with expressive people, entrepreneurs, and creative-thinkers from all over. If I’m being completely transparent though, I’m a little worried with how crowded it’s getting, but it’s still one of my favorite spots to grab a taco and explore outdoors all.day.long. No place like Austin.

We stayed at the brand new Archer Hotel near the Domain, an up and coming area of shops, restaurants, and Rock Rose (all new bars and clubs). I can’t say enough good words about Archer Hotel.

We had complimentary “sweet dream” wishes delivered daily to our room, and there was a fancy espresso maker that Zack enjoyed. This hotel was truly mindful of their guests!

The shower was big enough to fit some friends with space for a dance party, but I only photographed the entrance…

Homemade brunch in the hotel restaurant was reasonably priced, and the salsa was great. Win/Wins in my book!

In honor of our fun weekend in Austin, I’m making a list of favorites! If you’re in Austin, try these and let me know what cha think 🙂

Favorite sno-cone:
SNO-BEACH. Bring cash. They give complimentary ice to your fur ballers, and that kind of love goes a long way. They’re delicious to boot- I never knew I could love a sno-cone so much!

Breakfast Taco:
Juan in a Million, specifically the Don Juan. Do it. Thank me later. If you’re lucky, you’ll get to shake the owner’s hand…he’s actually won awards for “best handshake”. 🙂

Tacos:
Torchy’s Tacos (the OG is from Austin!). Texans know there’s a difference between breakfast tacos and just plain ‘ole tacos. You’ll see, too.

Breakfast:
Biscuits and Groovy. This is a food truck! I always forget to mention that. Plan to nap afterward; you’re gonna need one. If you’re in the mood for lighter fare, I suggest Bouldin Creek Cafe. The kick-ass granola and fruit is my favorite. They’re pet friendly with lots of vegan options!

Soul food:
HOOVERS. Casual, relaxed soul food at a good price. Get the Beet-A-Rita and DO order some cobbler. If you’re lucky, Anthony will be your server. I’m sure he has NO IDEA who I am, but the best service I’ve ever received at a restaurant was from him. I haven’t seen Anthony in at least three years, and I remember his name. BECAUSE HE WAS THAT GOOD.

Margarita:

Pizza:
Homeslice Pizza on South Congress. WORTH THE WAIT!

Burger:
Hopdoddy, the OG on South Congress. My favorite is the Greek (probs because I don’t eat beef). My mouth is watering.

Nighttime bar:
The Handlebar. I’m not sure what it is about this place, but it’s SO.MUCH.FUN.

Texas BBQ:
Franklin’s (it’s an experience you’ll never forget) or The Saltlick, but we had our rehearsal dinner at The County Line. Honestly, you can’t go wrong with any of these.

Running routes: (duh)
Austin is a very active city and a runner-friendly place! Lady Bird Lake Hike-and Bike Trail is my favorite, but go early in the morning before the city awakes. This is when it’s the most peaceful and it really feels like it’s yours. Cool down by kayaking on the lake after.

Hill routes:
HILL TRAINING LIKE A MOTHER on the hill at the intersection of Lamar and MLK but be aware of traffic. You’ll know this hill when you see it.

Best outdoor atmosphere:
Spiderhouse, they also have coffee AND alcohol AND food, so whatever you’re in the mood for.

Parks:
Pease park is nice and shady and Zilker is iconic for the pups. Can’t go wrong with either!

Coffee:
Epoch. Or Bennu for their chai teas, aka my kryptonite.

Hiking:
Loop 360 Bridge is iconic and picturesque, but I love taking dogs to Bull Creek.

Cheap, quick food that won’t kill you if you have digestive diseases:
P. Terry’s. I always get the #5 veggie burger, and it makes me so happy.

Weekend Recap: Pizza Day, OKC + Movies

CHRISTY CAME TO TOWN!

Christy and I roomed together in Houston for a year and a half. She and Zack met in the same graduate college at Rice University, and almost immediately we knew that Christy was “our people”. We’ve been close friends since 2014!

We began our weekend by enjoying the weather on the patio at Empire Slice House in OKC, probably one of my favorite pizza spots in Oklahoma to date. I mean. Look at dat pizza. Plus they had Shiner beer, and ain’t nothin’ finer than Shiner, so we’re 2 for 2, Empire Slice House. HIGHLY RECOMMEND if you’re ever out and about around OKC! Christy picked a good day to fly in- Remicade/Pizza day! 🙂

Then we rented Hidden Figures a la RedBox. I love a girl power, and I love space. I can’t believe it’s taken so long to tell the story of these GENIUSES behind NASA who were complete trailblazers, except I kinda can (#society). But Hidden Figures is definitely up there with some of my favorite movies now. Just go buy it.

Saturday’s weather demanded outdoor festivities, so we settled for some specialty pops in the sun with ice cold beer on the side. Christy said, “Hey Stacey-pretty sure you could make these for free.” <– not untrue. I also got a really good chicken and hummus wrap situation from a food truck, but I forgot to photograph. Still gettin’ this whole blogging thing down! A nice family sat at our table with us and immediately started talking politics. Honestly, I really enjoy how eager people are to make conversation here in Central Oklahoma. These people are genuine and kind, and they always have enough time to speak to you and make you feel like a friend…even if you disagree politically ;).

And then we walked down the street to a brewery for more sips. Unfortunately neither Christy nor I are big drinkers, so after three beers over the span of four hours we needed naps (I’m a little ashamed to say). So we came home, ate leftover pizza (#CarboLoading), and watched the new Beauty and the Beast. Emma, you’ve come a long way since Hermione, and I love you all the same. 

This morning we woke up and had breakfast at a local eatery and then walked a couple of miles around and throughout campus just to look around- OU is really quite beautiful. I know nothing about it, but the architecture is admirable.

We finished off the weekend with a trip to the theatre to see Wonder Woman (lots of movies). I LOVED WONDER WOMAN!!!! GOOD LAWD I want to learn a dozen languages and Brazilian jiu jitsu and meet Chris Pine. Hope your weekend was just as great!

Weekend Recap + GF & Low FODMAP PB Granola Recipe

It’s been a minute. Last week was spent juggling phone calls with insurance companies and doctors in between naps. I’ve been flaring hard, running to the bathroom 16 times a day or so and fighting to stay hydrated, so I was begging for the insurance companies to comply and get me infused. One phone call, the representative asked if I had tried a “generic” brand of medication, one that was “less expensive and less of a hassle than an infusion.” I’m not sure who gave insurance company reps a license to practice medicine, but GAH THEY SUCK. Rant over.

Finally, on Friday.

Four years on this medication, and it’s losing its efficacy, but I’ll go for an appointment next week to brainstorm more solutions. But I am still SO thankful that symptoms have slowed down a bit since. PRAISE!

My parents came for the day on Saturday, and we took them to Torchy’s Tacos. If you live in Texas, Colorado, or Oklahoma and you’ve never been to Torchy’s, you should re-prioritize your life to include Torchy’s. My dad was pretty stoked about it. Then, they kindly took a “family photo” of us with our little house before they left.

After my parents left, we drove to the lake and watched the sun set. Perfect ending to a day.

Jaxon was thrilled to do some exploring. The little deaf dog is doing better at obeying sign language.

On Sunday, I made homemade granola while we watched a healthy dose of Netflix.

The very best part about this recipe is that it’s Low FODMAP AND gluten free (AND delicious). Recipe at the end of this post :).

Sunday was capped off with a four mile walk/run. Isn’t campus beautiful? I went to UT Austin, so this is a very genuine compliment coming from a rival school, where football is blood and life (even though we have been strugglin’). Really though. Such a pretty place for a run.

The first two miles were rough. Getting back into it felt like my lungs forgot how to give me enough oxygenated blood, and I literally saw stars from being dizzy once I made it to the top of some hills. I fully believe that the first couple miles are the worst part of running. I decided to walk/jog the two miles home. My body is still working to heal from this flare. It felt so good to be out on the pavement again, though. My happy place.

PB granola recipe:

If eaten in a quantity equal to or less than 1/4 C, it’s low FODMAP.
-2 tbsp coconut
-2 C gluten free old fashioned oats
-2 tbsp pumpkin seeds
-1 tbsp chia seeds

-1 tbsp pure maple syrup
-2 tbsp melted coconut oil
-1/2 C softened PB

mix dry ingredients and wet ingredients separately, then mix them together. Put them in the oven on aluminum foil for 30 minutes on 350, tossing occasionally. Ta-dahh! Granola. My personal favorite way of getting carbs in the early morning
